Tapioca is not a grain product. It is from a tuber, namely cassava. Cassava is a shrubby tropical American and African plant (Manihot esculenta) widely grown for its large, tuberous, starchy roots. The root of this plant, also called "cassava," is eaten as a staple food in the tropics, but only after leaching and drying to remove cyanide. Cassava starch is the source of tapioca.
